I am creating a custom specular channel in my own material data plugin. How do I create a graphical representation of the specular curve like the standard material specular channel has?

You have to fill the bitmap button's bitmap with your specular curve graphic which you have to create on your own.
Use the BitmapButtonCustomGui::SetImage() method to set the button's image.
